CASHEW CHICKEN 
2 1/2 chicken breasts, cut into sm. pieces
2 tbsp. oil
1 env. brown gravy mix
1 c. water
1 med. onion, chopped
1/2 green pepper, chopped
1/2 c. cashews

Heat oil and brown chicken until it turns white, 2 to 5 minutes. Add gravy mix and water. Cook on medium until thick. Add all remaining ingredients. Simmer for 5 minutes. Serve over rice.
