POTATOES AND TOMATOES 
1 tbsp. olive oil
1 medium onion, sliced
3 medium potatoes (about 1 1/4 lb.), peeled and cubed
1 c. Roma tomatoes, undrained
1/4 tsp. crushed oregano
1/2 tsp. basil
salt and pepper, to taste

Place oil and onions in a skillet and cook on low for 3 minutes. Add potatoes and tomatoes. Season with spices and cover. Cook on medium-low for about 20 minutes. Uncover and cook an additional 5 minutes or until potatoes are tender.

Serves 4.
