SWEET POTATO (YAM) TOMATO BISQUE 
3 tbsp. olive oil
1/4 c. finely chopped onion
1/2 c. coarsely diced green pepper
1 1/2 c. boiling water
4 med. sweet potatoes, peeled and coarsely diced
2 1/2 c. canned tomatoes
1 tbsp. brown sugar
1/4 c. butter
1/4 c. flour
4 c. milk
Salt and pepper to taste

Heat olive oil; add onion and green pepper and cook until tender. Add water and sweet potatoes. Heat to boiling point over medium heat and cook covered until potatoes are almost tender. Add tomatoes and brown sugar. Cook covered 10 minutes.

In another pan, melt butter over low heat, stir in flour carefully and blend. Gradually add milk and cook until thickened and smooth, stirring constantly. Add white sauce to sweet potato mixture and season to taste with salt and pepper.
