SPANISH RICE 
1 c. white rice
1 c. water
1/4 c. tomato sauce
1 med. onion, sliced
2 cloves garlic, mashed
1/2 tsp. black pepper
1/2 tsp. salt
1/2 tsp. cumin
1/2 med. bell pepper, sliced

Add 2 teaspoons oil to saucepan and saute onion and bell pepper. Add rice at medium temperature until rice is clear and slightly brown. Bring temperature to medium-high and add water and spices, bring to a full boil, reduce heat to low temperature. Cover and simmer for 15 minutes. Do not uncover pot, the steam cooks the rice. Uncover after 15 minutes and serve. Makes 4 servings.
