SPANISH RICE 
4 tbsp. shortening
2 c. white rice
2 tbsp. chopped onion
1/2 tsp. minced garlic
1 can tomatoes
4 to 6 c. chicken broth

Brown rice lightly with shortening. Add onion, garlic and tomatoes and cook for 2 minutes. Add chicken broth and bring to a boil. Cover and simmer until liquid is absorbed, approximately 20 minutes.
