ZUCCHINI CASSEROLE 
2 med. zucchini, sliced
1 lg. green pepper, cut up
2 lg. tomatoes, peeled & cut up
1 c. mozzarella, cubed
1 tsp. Italian seasoning

In casserole dish mix vegetables with Italian seasoning. Bake until vegetables are tender. Add cheese. Cover and bake until cheese is melted at 350 degrees.
