ZUCCHINI CASSEROLE 
1 lg. onion
1/2 c. parsley
3 toes garlic
1/2 sweet pepper
4 med. zucchini squash, peeled and sliced thin
1 c. Italian bread crumbs
1/2 c. Italian cheese
1 sm. can tomato sauce
1 lb. Alaskan mock crab
1 tsp. Louisiana Hot Sauce
Olive oil to grease

Fry onion, parsley, sweet pepper and garlic in olive oil until soft (not brown). Put in zucchini with tomato sauce and a little water (to almost cover zucchini). Simmer until zucchini is tender, add mock crab and continue to simmer until crab cooks and until most of liquid is down. Add Louisiana Hot Sauce and stir.

Remove from heat and add bread crumbs and cheese. If too moist add more bread crumbs and cheese. Place in casserole dish, smooth top, sprinkle with cheese and bread crumbs. It is ready to serve. (May be reheated in microwave or oven.) Makes 6-8 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
