“EASY PANCAKES” IS IN:

EASY PANCAKES 
1 egg
1 cup flour
1 tsp. baking powder
1 tsp. salt
1 cup milk

Mix the first four ingredients together. Then add the milk gradually until batter is smooth. Pour batter on greased hot griddle to size desired. Bake on hot griddle until tiny bubbles form around edges; flip and bake another 1-2 minutes until cooked through.

Note: Batter thickens as it sits. If the batter becomes too thick, add a little extra milk. If too thin, add another teaspoon of flour until desired consistency. A thicker batter and a hotter griddle will make thicker pancakes; a thinner batter and a cooler griddle will allow batter to spread for thinner pancakes.

Makes about 12 small pancakes.

Servings: 12 (1 small pancake per serving)

I usually buy a mix for my pancakes, but this morning realized I had none. I had my tastebuds all set for pancakes, so I found this recipe. I have to say...NOT BAD!! This was actually just about as quick to mix up as the storebought mix I usually use. I will use this recipe again! Thank you!

I give this 5 stars for simplicity, but a solid recipe. We normally use a pre-packaged yellow boxed mix, but my six year old asked me to make homemade ones. He loved them, and kept thanking me. I doubled the recipe and replaced some of the milk with vegetable oil (for the double batch a little more than a 1/3 cup) so I could also make waffles. Thanks cooks.com, appreciate the resources you share!

The only change I would highly recommend is adding Baking Soda. We added 3/4 teaspoon, and they were great! Without that they were flat and blah.

Pancake recipe was good I use a gluten free flour mix takes about a tablespoon more to make batter and a tsp of vinagar to to milk to make butter-milk pancakes.

Very good for a quick and easy pancake recipe. I added a touch of vanilla to the batter and made extra to freeze and put in the toaster later.
