PLAIN PASTRY 
1 1/4 c. sifted enriched flour (1 1/3 c. sifted)
1/2 tsp. salt
1/2 c. shortening
4-5 tbsp. ice water (3 to stir, add rest)

Sift dry ingredients together or stir lightly together. Cut in shortening. All liquid and stir into a ball with a fork. Handle as little as possible. Roll out on lightly floured surface. For a single crust only pick holes in the bottom after putting in the pan (when baking with not filling).

Single crust - bake at 400 degrees, 425 degrees for 15-20 minutes. Fruit pie - bake at 425 degrees for 40 minutes.
