PORK ROAST WITH SAUERKRAUT 
4 strips bacon
1 32-ounce jar sauerkraut
1 onion, chopped
2 apples, cubed
6-pound boneless pork roast

Place bacon on bottom of large pot and cover with half the sauerkraut. On this spread half the chopped onion and apples. Next, place pork roast. Repeat layer of sauerkraut, apples, and onion. Cook covered on low heat for 30 minutes, then place covered pot in oven at 325°F for 3 hours.

Serves 8-10.

This was amazing! It is so simple yet so tasty. The pork "melted in your mouth" is what my guests said. I think the apples bring some sweetness. I added a few carroway seeds but it would have been great without them. So, so good.

This was easy to make and turned out very well. I tweaked it a little; I had no bacon, so I substituted olive oil. Also, rubbed the roast with rosemary and thyme, and put whole cloves in one half of the apple. Just couldn't stop eating the sauerkraut.

I will be trying this with the onion, bacon and apple very soon!! I am PA Dutch, born in Hamburg, PA. This dish was one of my Mother's specials, only without the onion, bacon & apple. We boil the kraut, layered with pork chops, for about 1 1/2 hrs., then pile it (kraut) on mashed potatoes. Yummy! Thanks for this recipe! So simple and delicious!

I usually use lean pork cuts and chop them into big chunks. Probably not as good as the roast but it cooks a lot faster. Have also used chops with great results. I like to eat more healthy so I use a whole pound of bacon, half on top and half on the bottom LOL. Take a big metal spoon and stir it up before you eat, breaks up the bacon and pork chops. We always eat this as a "one dish meal". Much better results if you drain the kraut well first. Good with Bavarian kraut also.

I love sauerkraut dinners. I find sauerkraut made with salt, not wine or vinegar, tastes best and actually only needs 10 minutes of cooking. It can be added when the meat is almost done.
