ROLLED CHICKEN BREASTS
FLORENTINE
 
2 whole chicken breasts, split, skinned & boned
4 thin slices of ham
4 thin slices of Swiss cheese
1 pkg. (10 oz.) frozen chopped spinach, thawed & well drained
1 c. cream of chicken soup
1/3 c. water
1/4 c. sliced green onions
1/8 tsp. dried thyme

Pound chicken to 1/4 inch thickness. Place a ham slice, cheese slice and 1/4 of the spinach on each chicken piece. Roll up. Secure with toothpicks. Place chicken seam-side down in 12 x 8 inch microwave safe baking dish. Cover. Microwave on high 5 minutes.

In bowl, stir soup, water, onions and thyme. Pour over chicken. Cover, microwave on high 10 minutes or until chicken is fork-tender, rotating dish once during cooking. Let stand covered for 5 minutes. 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
