ROLLED CHICKEN BREASTS 
3 whole chicken breasts, halved and boned
1/2 lb. Mozzarella or Swiss cheese, sliced thin
Olive oil
1 c. seasoned bread crumbs
1/4 c. grated Parmesan cheese
1 tsp. parsley
Salt and pepper to taste
1/2 c. white wine
1 sm. can mushrooms, drained

Pound chicken flat. Roll sliced cheese and meat together. Mix bread crumbs, grated cheese, parsley, salt and pepper. Dip chicken in olive oil and then mixture of crumbs. Bake at 350 degrees for 20 minutes. Add wine and mushrooms. Bake an additional 20 minutes.
