MEXICALI CASSEROLE 
1 lb. ground beef or turkey
1 (1 1/2 oz.) pkg. taco seasoning mix
1 (14 1/2 oz.) can whole tomatoes, chopped and undrained
1 (8 1/2 oz.) can whole kernel corn, drained
1 egg
2/3 c. milk
1 pkg. Martha White Mexican cornbread mix

Grease a shallow 2-quart baking dish. Brown meat in large skillet; drain. Return meat to skillet and add taco seasoning mix, tomatoes, and corn. Bring mixture to a boil over medium heat, stirring occasionally.

Pour mixture into prepared dish. Beat egg in small mixing bowl. Add milk and cornbread mix; stir until smooth. Pour cornbread batter over meat mixture. Bake at 400 degrees for 25-30 minutes or until golden brown. Cool for 10 minutes before serving. Makes 4-6 servings.
