MEXICAN CASSEROLE 
1 to 1 1/2 lbs. ground meat (beef, turkey or pork)
1 pkg. taco seasoning
1 can tomato sauce, tomatoes or plain water
1 pkg. soft flour tortilla, lg. size
Sour cream or substitute
8 oz. Mozzarella cheese
4 oz. cheddar cheese
Chopped onions & peppers (opt.)

Brown meat, onions and peppers. Add taco seasoning. If desired 1 teaspoon flour can be stirred in for thickening. Add liquid tomato or water. Set aside.

Spray casserole with non-stick spray. Spread tortillas with sour cream and place 1 in casserole. Top with a layer of meat sauce, sprinkle cheese on meat and continue to layer to fill dish, ending with cheese.

Bake in microwave 2 to 3 minutes on medium for 7 to 8 minutes on high. Can be baked in conventional oven, 25 to 30 minutes until cheese melts. 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
