ZUCCHINI BREAD 
3 eggs
2 c. sugar
3 c. flour
1 c. oil
2 tsp. vanilla
1 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda
1 tbsp. baking powder
2 c. grated zucchini, no seeds
1 c. drained, crushed pineapple
1/2 c. nuts, raisins or coconut

Mix and bake 1 hour at 325 degrees. Makes 2 loaves.
