CHINESE PEPPER STEAK 
1 1/2 lb. sirloin steak
3 tbsp. vegetable oil
3/4 tsp. salt
1/4 tsp. pepper
1 c. sliced onions
1 clove garlic, minced
2 c. green pepper, sliced
2 c. diced celery
1/2 c. beef broth
2 tsp. cornstarch
2 tbsp. soy sauce
Rice or noodles

Cut steak in pencil thin strips, 2 inches long. Heat oil in heavy skillet; brown meat in it. Mix in salt, pepper, green peppers, onions, garlic and celery; cook 2 minutes, stirring almost continuously. Stir in broth; cook over low heat 5 minutes. Mix together the cornstarch and soy sauce until smooth; add to meat mixture and bring to the boiling point, stirring steadily. Cook 3 minutes longer. (Cook long on low heat if you prefer vegetables softer). Serve with rice or noodle. Serves 4-6.
