PORK CHOP SUPREME | |
6 to 8 pork chops 1/2 stick butter 1 green pepper, chopped 1 1/2 c. boiling water 1 tsp. sugar 1 bay leaf crushed Salt and pepper 1 onion, chopped 1 c. regular rice 1 tsp. salt 1 (16 oz.) can cut tomatoes Salt and pepper pork chops and brown in fry pan. Take them out of the pan when browned and set aside. In the same pan mix butter, onion, green pepper, and rice. Saute until the onion is tender. In a saucepan stir together boiling water, salt, sugar, tomatoes, and bay leaf. Pour mixture from fry pan into mixture in saucepan. Stir well over low heat for 1 to 2 minutes. Remove from heat and pour mixture into a 13x9 casserole. Lay pork chops on top, cover and bake at 325 degrees for 50 to 60 minutes. Serve with salad and rolls. Serves 6. |
