DIABETIC CAKE 
2 1/2 c. raisins
2 c. water
2 c. applesauce (natural unsweetened)
2 eggs
3/4 c. oil
1 tbsp. baking soda
2 c. flour
1 1/2 tbsp. cinnamon
1/2 tsp. vanilla
2 tbsp. sweetener
1/2 c. nuts, optional

Cook raisins in 2 cups water until dry. Mix applesauce, eggs, and oil then add baking soda and flour. Mix well then add cinnamon, vanilla, and sweetener and beat with a spoon until well combined. Add raisins and mix again. Pour into greased and floured 13 x 9 inch pan. Bake at 350 degrees for 30 minutes. Toothpick will come out clean when put into the cake when it is done.
