DIABETIC CAKE 
2 c. plain flour
1/4 tsp. salt
2 tbsp. liquid sweetener
1 c. sugar free applesauce
3/4 c. oil
2 c. raisins
1 tsp. baking soda
2 eggs
1 tsp. vanilla
1 tsp. cinnamon
1 c. nuts
1/4 tsp. nutmeg

Cook the raisins in 2 cups water until all of the water is cooked out. Sift the flour with the cinnamon, baking soda, salt, and nutmeg. Add eggs, oil, sweetener, and applesauce. Beat for 2 minutes until well mixed, then add raisins and nuts. Bake in a tube pan at 350 degrees for about 40 minutes. Test for doneness. Cool and slice.
