DIABETIC CAKE 
2 c. water
2 c. raisins
1 can unsweetened applesauce
3/4 c. cooking oil
1/2 tsp. vanilla
1 c. chopped nuts
1/2 tsp. nutmeg
1 1/4 tsp. cinnamon
2 tbsp. liquid sweetener
2 eggs
2 c. flour
1 tsp. baking soda

Cook raisins in water until water is gone. Add applesauce, eggs, sweetener, and oil; mix well. Blend in soda and flour. Add remaining ingredients and mix well. Bake at 350 degrees for 35 minutes.
