DIABETIC CAKE 
2 c. water
2 c. raisins
2 c. flour
2 eggs
3/4 c. oil
1 c. unsweetened applesauce
2 tbsp. liquid sweetener
1 1/2 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. nutmeg
1 tsp. vanilla

Cook the raisins in the water until the water is gone. Add applesauce, eggs, sweetener, oil and mix well. Blend in flour and baking soda. Add remaining ingredients and mix well. Bake in long flat pan at 350 degrees for about 35-40 minutes.
