BAKED SCALLOPS 
Bay scallops or deep sea scallops (10-12 per person)
1 egg
1 pkg. Ritz crackers (crushed)
Salt
Pepper
Melted butter

Beat an egg slightly. Dip scallops a few at a time into beaten egg, then dip into bowl of finely crushed Ritz crackers to coat. Pack lightly into individual buttered baking dishes or a lightly greased cookie sheet in single rows. Salt and pepper to taste and pour a few drops of melted butter over the tops.

Bake at 350 degrees for 15 minutes or until golden sizzle forms. Do not overcook. Serve immediately with your favorite tartar sauce or sharp preserve.
