HERBED BAKED SCALLOPS WITH
BUTTERY SAUCE
 
2 lb. fresh sea scallops
1/2 cup (1 stick) butter
3 tbsp. chopped parsley
1 1/2 tsp. leaf basil, crumbled
1 tsp. salt
1/4 tsp. pepper

Wash scallops in cold water; drain thoroughly between sheets of paper toweling. Place in a single layer in a large shallow baking dish; dot with butter. Sprinkle with parsley, basil, salt and pepper.

Bake in 350°F oven for 5 minutes. Stir scallops to coat well with butter mixture. Bake 20 minutes longer or until tender. Serve buttery sauce from dish over mashed or baked potatoes, if you wish.
