VELVEETA MAC AND CHEESE 
1/2 (16 oz.) pkg. macaroni or small shells
1/2 (2 lb.) pkg. Velveeta cheese, cubed
1 (10 oz.) can cream of mushroom soup
1 cup mayonnaise
cracker crumbs, for sprinkling

Prepare pasta according to package directions. Drain.

Preheat oven to 350°F. Prepare a casserole dish with non-stick cooking spray (Pam).

Combine macaroni, soup and mayonnaise. Mix well. If needed add milk, cream or buttermilk (whatever is on hand) to create a gravy like sauce, should not be dry.

Add 1/2 of macaroni mixture to casserole dish, top with 1/2 of the cubed Velveeta. Add rest of macaroni mixture. Top with remaining Velveeta. Sprinkle crumbs on top.

Bake at 350°F for 30 minutes.

Note: I have done in microwave at 50% power for 30 minutes if needed. It's better in the oven.

Variation: If you want you can add your favorite cheese.
