FRUITED CHICKEN SALAD 
4 c. diced cooked chicken
1 (15 oz.) can unsweetened pineapple chunks, drained
1 (11 oz.) can unsweetened mandarin orange sections, drained
1 c. chopped celery
1/2 c. sliced pitted ripe olives
1/2 c. chopped green pepper
2 tbsp. grated onions
1 c. low-calorie mayonnaise type salad dressing
1 tbsp. prepared mustard
1 (5 oz.) can chow mein noodles
Lettuce leaves

In a large bowl combine cooked chicken, pineapple chunks, oranges, celery, olives, green pepper and onion. Stir together salad dressing and mustard; toss gently with chicken mixture. Cover and chill several hours. Just before serving, mix in chow mein noodles; turn the chicken salad into a lettuce-lined serving bowl. Makes 8 servings.
