OATMEAL COOKIES 
1 c. all-purpose flour
1 tsp. baking powder
1/4 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. ginger
1 c. brown sugar
1 c. rolled oats
1/4 c. vegetable oil
2 tbsp. milk
1 egg or 2 egg whites
1/2 c. raisins or chopped nuts

Stir together flour, baking powder, salt, cinnamon, ginger, sugar and rolled oats. Mix in oil, milk and egg thoroughly. Stir in raisins or nuts.

Drop teaspoonfuls of dough about 2 inches apart on lightly greased baking sheet. Slightly flatten tops. Bake at 375 degrees for 8-10 minutes. Remove from baking sheets and cool on rack. Makes about 3 dozen cookies.
