ONE BOWL CHEESECAKE FILLING 
Graham Cracker Crumb Crust pressed into a 9 inch pan
2 (8 oz.) pkg Cream Cheese at room temperature
3/4 cup confectioners' sugar
2 tbsp. all purpose flour
1/4 tsp. salt
2 tbsp. lemon juice
1 tsp. freshly grated lemon rind
1 cup heavy cream
4 eggs

Preheat oven to 325°F.

Beat 1 pound cream cheese on medium speed of mixer until light and fluffy. Sift together confectioners' sugar, flour, and salt; add to cheese.

Slowly add lemon juice, lemon rind and heavy cream. Mix thoroughly.

Change to high speed; add eggs and beat for 2 minutes.

Slowly pour mixture into crumb-lined pan.

Bake for 1 hour and 15 minutes. Cool thoroughly.

Makes 8 servings.
