HONEY MUSTARD CHICKEN | |
4 boneless chicken breasts 1/4 c. honey 2 tbsp. mustard 1 tbsp. cooking oil 1 tbsp. lemon juice 2 chicken bouillon cubes 1 1/2 c. rice 3 1/2 c. boiling water 1 med. carrot, shredded 1/4 c. sliced onion 2 tbsp. raisins Mix bouillon in boiling water, add rice, carrots, onion and raisins. Place in a 2 quart baking dish. Place chicken on top of rice mixture. Mix the honey, mustard, oil, and lemon juice together and pour over the chicken. Bake in a 350 degree oven for 45 minutes or until chicken and rice are tender. |
