CORN BREAD OR MUFFINS 
1 c. cornmeal
1 c. flour
2 tbsp. sugar
1 tsp. salt
3 1/2 tsp. baking powder
1 egg
1 c. milk
1/4 c. shortening, melted

Heat oven to 450 degrees.

Sift flour, measure; sift again with cornmeal, baking powder, sugar and salt.

Beat eggs slightly, add milk and shortening. Combine with dry ingredients, stirring until moist.
