PROTEIN RICH CORN MUFFINS OR
BREAD
 
1 c. whole ground cornmeal
1/3 c. soy flour
1/4 c. whole wheat flour
2 tsp. baking powder
1/4 c. instant dry milk (2 1/2 tbsp. non-instant dry milk)
1 egg
1 c. milk
3 tbsp. oil
2 tbsp. honey
1 c. grated carrots or 1/2 c. chopped dates or 1 (8 oz.) can crushed drained pineapple (options)

Mix first 5 ingredients together in a large bowl. In a small bowl, mix egg, milk, oil, and honey. Add the liquid mixture to dry mixture and beat until smooth (preferably with an electric mixer). Add any options. Pour into a well oiled muffin tin or cake pan and bake at 375 degrees for about 20 minutes (30 for bread) until a toothpick comes out clean.
