SAVORY BEANS | |
I have eliminated the tomatoes & added a dash of chili sauce (delicious). Have also added a dash of General Tsao's sauce. Have added a few dashes of Adobo seasoning + juice from banana peppers. You can adjust taste - by adding an assortment of your favorite's... ALWAYS OUTSTANDING. This was originally published in cookbook "Best of the Best from West Virginia". 1 lb. dried beans 1 large onion, chopped 1 green pepper, chopped 2 tbsp. oil 1/4 lb. bacon, diced, then brown and drain 2 tsp. salt 1 garlic clove, minced 2 tbsp. brown sugar 1 tbsp. mustard 1 (15 oz.) can diced tomatoes 1/2 tsp. pepper sauce (more if desired) 2 tsp. Worcestershire sauce Place beans in saucepan - cover with water. Bring to boil on high, then reduce heat and simmer for 1 hour - or - until tender. Sauté onion & green pepper in oil for 5 minutes - (then add to beans). Add in rest of ingredients and continue to simmer - for an additional hour - adding water as needed.
