OATMEAL COOKIES 
1 1/4 c. butter
3/4 c. firmly packed brown sugar
1 egg
1 tsp. vanilla
1 1/2 c. self-rising flour
1 tsp. cinnamon
1/4 tsp. nutmeg
3 c. Quaker oats (uncooked, quick or old fashioned)

Heat oven to 375 degrees. Beat butter and sugars together until fluffy. Beat in egg and vanilla. Add flour and spices; mix well. Add oats. Drop rounded teaspoonful of mixture onto ungreased cookie sheet. Bake 8-9 minutes for chewy cookies, 10-11 minutes for crisp cookie. Cool cookies on waxed paper.
