BEST OATMEAL COOKIES | |
2 sticks butter 3/4 c. firmly packed brown sugar (dark brown) 1/2 c. granulated sugar 1 egg 1 tsp. vanilla 1 1/2 c. all-purpose flour (I use self-rising; leave out soda and salt) 3 c. oats, uncooked Butterscotch bits (optional) Chocolate chips (optional) 1 c. raisins or walnuts (optional) Heat oven to 375 degrees. Beat butter and sugars until fluffy. Beat in egg and vanilla. Add flour combined with soda and salt, if using all-purpose. Mix well. Stir in oats. Add optional ingredients to suit taste, if desired. Drop by rounded tablespoons onto ungreased cookie sheet. Bake 8-9 minutes for a chewy cookies, 10-11 minutes for a crisp cookie. Cool 1 minute on cookie sheet. Cool on rack. Makes 4 1/2 dozen. HINT: Divide batter and add butterscotch bits to part, chocolate chips and walnuts or raisins to rest. |
