“CLASSIC VANILLA CUPCAKES” IS IN:
NEXT RECIPE:  CREAM CHEESE CUPCAKES

CLASSIC VANILLA CUPCAKES 
1/2 cup (1 stick) softened butter
3/4 to 1 cup sugar
2 eggs
2 tsp. vanilla extract
1 1/2 cups all-purpose flour
1/2 tsp. baking powder
1/4 tsp. salt
2/3 cup cold milk

Preheat oven to 350°F.

Cream butter and sugar. Add eggs 1 at a time, beating after each addition. Stir in vanilla.

In a separate bowl, stir together all dry ingredients. Add to butter mixture; stir in milk.

Place paper cupcake liners in pan. Fill each 2/3 full.

Bake at 350°F for 18 to 24 minutes.

When cooled, frost with your favorite vanilla frosting, if desired.

Yield: 12 cupcakes.

I love it! I made it for my friends and they said it was amazing. Thank you. It was a birthday cake. Now they ask me to make it every day. Thank you but is it kind of hard when it comes out so I tried to take it out later and it worked.

Very easy and very yummy! My only comment is that this tastes more like a pound cake to me. Very dense and delicious cake, but not springy and airy as a cupcake.

Soon after baking, the cupcake was nice and moist. A few hours later though, compared to a chocolate cupcake I made the day before, it was not as moist. Having said that, I will still use this basic and simple vanilla cupcake recipe.

These are FAST, SIMPLE to make and PERFECT. I followed it precisely using 3/4 cup sugar (not 1 cup). I divided the batter in half and flavored one vanilla and the other lemon (including some fresh lemon zest). I like that they aren't very sweet because frosting is sickeningly sweet, so when they're frosted, they are perfectly balanced. Also, I feel like these are more of a sophisticated cupcake; they're dense instead of the typical store-bought squishy uber moist cupcake that could give you diabetes with 1 bite. Finally, I always prefer a recipe that uses butter over vegetable oil. The flavor and texture are far superior in my book. This will be my "Go-To" cupcake recipe from now on.

Easy to make. I made these for St. Paddy's day so they were green! I dyed my sugar green which caused the whole thing to come out almost tye dyed. Can't wait for the kids to see them! little chocolate shamrocks too!

Hi there! Your recipe definitely looks simple and fool-proof, would love to give it a try! But I just have one quick question: does the milk have to be cold? Whenever I bake, I make sure all my ingredients are at room temp. Would using cold milk make a big difference (texture/taste)? Thanks!

This recipe is definitely fool-proof and easy to follow for people who want a quick and easy bake. I added an extra egg (as I do to all my recipes), and about 1/4 cup of brown sugar, and a squeeze of honey to adjust to my taste. I also used buttermilk instead of regular milk (mostly because that's all I had around the house lol). They came out very fluffy and nice, but next time I'll probably use another stick of butter. To me, vanilla cupcakes just aren't real unless you can literally feel the butter lol
