BRAZILIAN RICE AND BEANS 
2 c. red or pinto beans, dry
1/4 lb. bacon, cut in sm. pieces
2 bay leaves
1 onion, diced
2 cloves garlic, diced
4 tbsp. shortening
Salt to taste

BEANS:

Boil beans a few minutes in plenty of water, then remove from heat and soak with lid on for 1 hour. Cook very slowly with bacon, bay leaves and salt until done. Brown onion and garlic in shortening and add to beans. Mix in well.

To use canned beans in this recipe, use 2 quarts processed beans; brown bacon pieces and onion together before adding beans, garlic and bay leaves. Bring to boil and simmer 15 minutes. Fast!

RICE:

2 c. rice
1 onion, chopped
1 clove garlic, diced

Saute all together in enough shortening to keep from sticking, until evenly browned. Add 3 cups water and a few drops of lemon juice. Steam until done, and add more water if needed. Serve beans over the rice with green salad and bread on the side. Serves 8.
