RED BEANS AND RICE WITH
MEATBALLS
 
1 1/2 lbs. ground beef or turkey
1/2 c. chopped onion
1 egg
1 tsp. Worcestershire sauce
1 12 tsp. salt
1 (6 oz.) can tomato paste
2 c. water
1/2 tsp. thyme
2 c. cooked rice
1/3 c. dry bread crumbs
2 cloves garlic, crushed
1/4 tsp. pepper
1 tbsp. chopped parsley
2 (15 1/2 oz.) sm. red beans, undrained

Combine beef or turkey, onion, crumbs, egg, garlic, Worcestershire sauce, salt and pepper. Shape into 24 meatballs. Brown meatballs, drain fat. Add tomato paste, water, parsley and thyme; cover and simmer 30 minutes. Stir in small red beans and rice and cook until heated through - about 10 minutes. Serves 6.
