PORCUPINE BEEF BALLS 
2 1/2 c. spaghetti sauce
1 lb. ground beef
1/2 c. uncooked rice
1/4 c. minced onions
1 tsp. salt
1/8 tsp. pepper

1. Lightly grease a 2 1/2 quart casserole having a tight fitting cover.

2. Prepare and set aside spaghetti sauce, adding 1/2 cup water.

3. Meanwhile, combine beef, rice, onion and a mixture of salt and pepper; mix lightly.

4. Shape into 1 1/2" balls and put in casserole. Pour spaghetti sauce over meatballs.

5. Cover and bake at 350 degrees about 1 hour or until visible rice is tender when pressed lightly between fingers.

6. To serve, garnish with parsley. 4 to 6 servings.
