VEAL AND RICE BALLS 
2 tbsp. each finely chopped onion, green bell pepper, and celery
2 tsp. butter
1 sm. garlic clove, minced
5 oz. ground veal
1 oz. uncooked instant rice
1/8 tsp. oregano leaves
1/2 c. each tomato sauce and water
1 pkg. instant chicken broth and seasoning mix
1/4 tsp. marjoram leaves

In 1 quart microwaveable casserole combine onion, bell pepper, celery, butter and garlic; microwave on high (100%) for one minute. Add veal, rice, and oregano and mix well. Shape into 8 equal balls.

In same casserole arrange veal balls and microwave on high for 3 minutes. In 1 cup liquid measure combine remaining ingredients; pour over veal balls. Cover with plastic wrap, folding back 1 corner to allow steam to escape, and microwave on medium (50%) for 12 minutes, turning veal balls over every 3 minutes. Let stand for 2 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
