ZUCCHINI BAKE 
3 c. zucchini, cut fine
2 med. carrots, shredded
1 sm. onion, chopped
1/2 c. sour cream
1 can cream of celery soup
1/3 c. melted butter
1 pkg. Stove Top stuffing mix
Shredded Cheddar cheese

Combine bread crumbs and seasonings of stuffing mix. Mix with melted butter, set half of stuffing aside.

Combine the other half of stuffing with remaining ingredients. Place in a greased 1 1/2 quart casserole. Top with reserved stuffing. Sprinkle with Cheddar cheese. Bake covered at 350 degrees for 25 minutes.
