BAKED MACARONI WITH ZUCCHINI AND THREE CHEESES | |
A colorful new version of everybody's favorite, packed with cheese. Great for a buffet. Bake at 400 degrees for 45 minutes. Makes 8 generous servings at 77 cents each. Nutrient Value Per Serving: 543 calories, 22 grams protein, 25 grams fat, 58 grams carbohydrate, 569 milligrams sodium, 68 milligrams cholesterol. 1 lb. elbow macaroni 4 tbsp. (1/2 stick) unsalted butter 1 tbsp. olive oil 2 med.-size zucchini (3/4 lb.), trimmed & cut into 1/2 inch thick slices 6 oz. mushrooms, cut into 1/8 inch thick slices (1 1/2 c.) 1 lg. onion, coarsely chopped (1 1/2 c.) 1 sweet red pepper, cored, seeded and cut into 1/2 inch pieces (1 c.) 2 cloves garlic, finely chopped 1/4 c. all-purpose flour 1 qt. cold milk (4 c.) 1 tsp. salt 1/4 tsp. ground nutmeg 1/2 c. dairy sour cream 1 tsp.
