BAKED CHICKEN AND CHEESE ZITI 
2 c. cooked Ziti OR elbow macaroni
2 c. fresh nonfat milk
2 tbsp. instant blending flour
Salt & pepper, to taste
Pinch of each - grated nutmeg and lemon peel
1 lb. skinless, boneless breast of chicken
1 lb. sliced vine ripe OR canned tomatoes
3 tbsp. Italian seasoned bread crumbs
3 tbsp. Parmesan cheese, grated

While Ziti cooks, prepare lowfat cream sauce. Combine milk, flour and seasonings in non-stick saucepan. Cook and stir over low heat until mixture simmers and thickens. Spray 1 1/2 quart baking dish with cooking spray. Arrange layers of drained Ziti, cream sauce, chicken cutlets and tomatoes. Sprinkle with bread crumbs and Parmesan last. Bake uncovered in preheated 375 degree oven for 35 minutes. Makes 4 servings, 325 calories each.

Loved this dish. I added spinach in the layers and topped with Parmesan and low fat shredded mozzarella. It was fantastic and I doubled the recipe and made it for my bunco group. Used whole wheat rigatoni. Very healthy and low fat. Great if you are on Jenny Craig or Weight Watchers.
