ZUCCHINI CHEESE BAKE 
6 c. shredded zucchini and summer squash
1 1/2 c. shredded onion
Salt and pepper
2 1/4 c. Bisquick pancake mix
3/4 c. vegetable oil
3/4 lb. cheddar cheese, chunks
3 eggs

Mix ingredients; season with salt and pepper. Pour into greased lasagna pan. Bake at 350 degrees for 40-45 minutes, until top is brown.
