“BUTTERY-CRUSTED BAKED TILAPIA” IS IN:

BUTTERY-CRUSTED BAKED TILAPIA 
4 (6 oz. ea.) boneless tilapia filets
6 to 8 Ritz crackers, crushed
1/2 tsp. seasoned salt
1/4 tsp. chili powder
1/4 tsp. Adobo seasoning
2 tbsp. unsalted butter, chilled

Arrange fish on a lined baking sheet. In a mixing bowl, combine crushed Ritz crackers with seasoned salt, chili powder, and Adobo seasoning (use clean hands to mix).

Cut butter into 6 equal pats. Place one pat a piece directly on the center of the tilapia. Cut remaining 2 pats into pea-sized pieces and mix by hand into cracker mixture. Sprinkle crumbs equally over each tilapia filet.

Bake in a preheated oven at 425°F for 15 to 20 minutes, or desired doneness. Serve hot on a nice platter.

Serves 4.

I coated the fish in egg then battered it in the crumbs and seasoning and sprayed all over with olive oil to make it crispy. Came out good.

You'll most likely find adobo seasoning in a Mexican American grocery store. Use the one with the green lid!!! I use it on everything!

I loved this recipe and i am not a big fan of fish! The easiest place to find adobo would be at walmart in the ethnic isle. The red lid is better trust me i have been using it for years!

Was very good but I would suggest the Ritz crackers be rolled out and the fish coated with it, when I followed this recipe it had plops of breading here and there.

I seasoned fish in fancy granulated garlic, lemon pepper, and seasoned salt then used crushed Keebler Club Crackers Original (more buttery than Ritz) served with wild rice! I love it!

Thanks SO much for posting this recipe! I made this dish for dinner tonight for our family of 3 and we all loved it, including our VERY picky 5yr old son! Tilapia has always been a favorite of mine but this is my absolute new favorite recipe and I will most definately be using it again in the very near future. I especially love the chili powder and Abodo seasoning. This was my first time trying out the Adobo but it will certainly not be my last. I highly reccomend this recipe to those who generally do not like fish but even more so to those who do!
