IMPOSSIBLE ZUCCHINI - TOMATO PIE 
2 1/4 c. chopped zucchini
1/4 c. chopped onion
1/2 c. grated Parmesan cheese
3/4 c. Bisquick
Dash of cayenne pepper
4 slices bacon, fried & crumbled
1 c. chopped tomato
1 1/2 c. milk
3 eggs
1/2 tsp. salt

Sprinkle zucchini, tomato, onion, cheese in greased 10 inch pie pan with high sides. Beat remaining ingredients, except bacon, until smooth or process 15 seconds in blender on high. Pour over zucchini mixture. Sprinkle with bacon. Bake 30 minutes or until knife inserted in center comes out clean, in 400 degree oven. Cool 7 minutes before serving.
