SAUSAGE & RICE CASSEROLE 
1 lb. Country sausage (Owens or Jimmy Deans)
1/4 c. chopped green pepper
1/2 c. chopped celery
1 lg. onion, chopped
2 1/2 c. boiling water
2 pkg. chicken noodle soup, dry mix
1 c. uncooked instant rice
12 oz. can mushrooms, drained

Brown sausage, pepper, celery and onion together in a skillet. Drain. Combine remaining ingredients, add the meat mixture and bake in a greased casserole dish at 350 degrees for 1 hour. Serves 8.
