SAUSAGE AND BROWN RICE CASSEROLE 
1 lb. pork sausage meat
1 c. chopped onion
1 c. chopped celery
3 c. cooked brown rice
2 (8 oz.) cans tomato sauce
1/2 c. raisins
1/2 tsp. salt
1 c. shredded Cheddar cheese

Brown sausage, breaking up with fork; drain off fat. Add onion and celery and saute until tender. Add next 4 ingredients and turn into shallow 1 1/2 quart baking dish. Sprinkle with the cheese and bake in preheated 350 degree oven for 25 to 30 minutes. Makes 4 servings.
