OLD TIME SOUTHERN SPOONBREAD | |
1 cup yellow cornmeal 2 cups boiling water 3-4 tbsp. butter 1 tsp. salt 3 large eggs well beaten 1 cup milk Preheat oven to 375°F. Gradually stir cornmeal into boiling water. Simmer, stirring constantly until mixture is smooth and thickens. Add butter and salt; stir until combined. Remove from heat and set aside to cool until lukewarm. Beat in eggs and milk for about 2 minutes. Transfer to a greased casserole dish or loaf pan and bake for about 35 minutes or until golden brown. Serve with a large spoon while still very hot, with melted butter on the side. Makes 8-10 servings. |
