OLD-TIME FRIED CABBAGE | |
An old Florida friend of mine shared his mom's recipe for fried cabbage. Probably not healthy for you, but oh so good!! 1 small green cabbage, diced into chunks 1 medium onion, diced 1/2 tsp. salt (adjust to your taste) 1/4 tsp. pepper 2 dashes of hot sauce 1/3 cup bacon fat* Place all in an iron skillet. Cook on medium low stirring to avoid browning of cabbage. Once it wilts and the onions turn clear, add 1/2 cup of water, turn down the heat to low simmer and cover it tightly with a lid. Let it steam for about another 30 minutes, checking occasionally and stirring it. Add more water if you like your cabbage cooked soft. Make sure all the water has evaporated before you serve. Great side dish for barbecue ribs and chicken. Note: You could probably use olive oil instead of bacon fat, but it won't have that down-home country cooking taste. Submitted by: SandyStorm |
