OLD TIME FLANNEL CAKES
(PANCAKES)
 
Flannel Cakes can be made on a hot griddle or frying pan lightly greased with butter or vegetable oil. Cast iron works especially well. The griddle is ready when a droplet of water dances across the surface.

2 cups flour
1 cup corn starch
3 rounded teaspoons baking powder
2 eggs, well beaten
1 teaspoon salt
3 cups milk
1 teaspoon vanilla (optional)
2 teaspoons butter, melted
1 tablespoon Karo corn syrup

Sift the dry ingredients together. Stir in the milk, vanilla, butter, and the beaten eggs.

Bake on hot griddle; turn once when bubbles form and finish baking other side.

To make buttermilk flannel cakes, substitute buttermilk for milk and substitute 1 teaspoon of baking soda for part of the baking powder.

This makes a large batch - freeze any extra to pop in the toaster.
