SWEET POTATO PIE 
1 1/2 c. sweet potatoes, mashed
1/4 c. finely chopped peanuts
1 tbsp. butter, softened
1 c. brown sugar
3 egg whites, separated
3/4 c. whole milk
1/8 tsp. salt
1/4 tsp. each allspice, cloves, nutmeg
1 (9 inch) pie shell, ready to use

Partially bake pie shell, 5 to 7 minutes at 375 degrees. Cool. Combine butter, sugar, cream. Add sweet potatoes, peanuts, egg yolks, spices and milk. Set aside. Beat egg whites until stiff.

Mix 1/3 egg whites into potato mixture, then gently fold the remaining 2/3 into potato mixture. Set aside. Prepare topping of:

4 tbsp. softened butter
4 tbsp. brown sugar
4 tbsp. flour
4 tbsp. finely chopped peanuts

Blend with mixture until crumbly. Pour batter into pie shell. Sprinkle topping evenly over surface. Bake at 375 degrees until knife blade comes out clean and dry ingredients approximately 30 to 45 minutes.
